व्हेज पुलाव | Vegetable Pulav | Veg Pulao by madhurasrecipe

Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make vegetable pulav today. This is very easy, simple and quick recipe. I have heated cooker on medium heat. We are making pulav directly in cooker. 1 tbsp oil is heated in cooker. Add 1 tsp cumin seeds, 3-4 bay leaves and Khada masala. I have taken cinnamon stick, star anise, cloves and cardamom in khada masala. Fry masala for about 30-40 seconds until they release flavours in oil. Add 1 finely chopped onion. Fry the onion for about 3-4 minutes until it becomes just soft. No need to turn it golden in colour. I have fried the onion for 5 minutes. Add 1 tbsp ginger-garlic paste and 2 green chilies chopped. I have made long pieces. Let’s fry ginger-garlic paste for about a minute. After frying ginger-garlic paste Let’s add veggies in this. Add finely chopped green beans, carrot. You can add veggies according to your taste. Potato and green peas. Mix well again. Fry the veggies for about a minute. After frying the veggies for a minute, add 1 cup long grain basamati rice. I washed the rice really good and soaked in water for 30 minutes. Mix well. This is looking really nice. After mixing rice well with veggies, it looks just yummy. As I have soaked rice for 30 minutes, I am adding only 1 1/2 cups water in this and not double. The more you soak the rice the less water will be required. Add raisins and cashew nuts and salt. Mix everything well together. In the end I am adding 1 tsp ghee. This is optional step. This gives nice taste and glaze to rice. Close the lid and cook on medium heat until 2 whistles. I have cooked vegetable pulav on medium heat until 2 whistles. Let’s check how is it. Aroma is tempting. Loosen up the rice with the help of fork. The rice is not at all sticky. Also it is not dry and too much loose. It has got nice texture. Wow.. When you make any rice from basamati rice and if you cook it in cooker, When it is cooked, open lid after 5 minutes and lossen rice with fork or any thin spoon. So its texture or rice grains won’t break. You can serve this as it is or can be taken out in a glass bowl. Vegetable pulav tastes yummy as it is. It goes well with a bit hot raita.
