This is stuffed ravioli. I was impressed
with the crumbles from Gardein. Just like traditional ground beef, I was able to
use them as an alternative plant-based filling for the savory stuffed ravioli.
So I rolled out the dough and made a pecorino and preserved lemon sauce. I
sauteed the crumbles with herbs and folded it into ricotta. To make the
entire dish vegan, you can use a vegan cheese as well. My ravioli came together
beautifully and the Gardein plant-based crumbles worked perfectly as a filling. I
finished with a little bit of olive oil and oregano – it was delicious!
